This is a Calabrese recipe, but so many variants are available, this one is the one that works for me.
1kg/2,2 pounds red bell pepper, seeded, diced
4 red or orange Habaneros, diced (seeded only if you want)
100m red wine
500gr/1,1 pounds sugar
1 teaspon of salt
2 package pectin ( in Italy ths is the quantity for 1 kg of fruit)
Put all ingredients in a pan and bring to a boil.
Boil for 10 min.
Let rest for 5 min and blend with an immersion blender.
Fill clean jars, lock them and put in a pan, covered with water, let boil for 15 minutes. Let the water cool off and store.
